Why harvest time matters

Our Bravoleum oils are harvested from September, while the olives are still green and intensely aromatic. Early harvesting produces less oil from each olive but creates fresher and more distinctive flavour profiles.

Our Everyday Picual is harvested later, from October onwards, producing a rounder and more versatile oil for regular finishing and cooking.

Can I cook with extra virgin olive oil?

Yes. Extra virgin olive oil is suitable for roasting, sautéing, baking, sauces and everyday cooking. For regular or generous use, choose our Everyday Picual or practical 5L format. Reserve more distinctive early-harvest oils for dishes where their aromas can be fully appreciated.

Which oil is best for fish?

It depends on the fish and preparation. Arbequina complements delicate white fish, seafood and emulsified sauces without overpowering them. Frantoio works well with grilled or more intensely flavoured fish because of its fresher, more peppery character.

What do bitterness and pepperiness mean?

Bitterness on the tongue and a peppery sensation in the throat are natural characteristics of many fresh extra virgin olive oils. Their intensity varies according to the olive variety, ripeness and production process. They are flavour attributes, not defects.

Why do olive oils have different colours?

Colour is influenced by olive variety, ripeness and natural pigments. Early green olives can produce greener oils, while other varieties may produce more golden-yellow tones. Colour alone does not determine quality, which is why professional tasting glasses are dark blue.

What is the difference between early-harvest and everyday olive oil?

Our early-harvest oils are produced from greener olives collected from September onwards. They offer more distinctive aromas and pronounced flavour profiles, but produce less oil from each olive. Our Everyday Picual is harvested later, from October onwards, giving it a rounder and more versatile profile for regular finishing and cooking.

How should I store an opened bottle?

Keep it tightly closed, upright and away from sunlight, heat and the cooker. Use it regularly after opening, as exposure to oxygen gradually reduces freshness and aroma. For a 5L container, transfer a small quantity into a clean, opaque bottle for daily use.
